With regards to the coin trick.....I don't know.
I've also read Pure Effect and know Derren likes to
further compound his miracles with a spot of bravado and
pure chance, but I still think that the coin used in
the which hand is the coin in segment is a double
header which Derren switches at some point.....think
about it: 1)Why would he specifically ask for a pound
coin? If you've read his books, you already know 2) The
walking away with the guy's £1 coin at the end gives him
ample chance to switch his double-header coin back to
the normal pound the guy gave him. I believe the
switch happens sometime between guesses 3 & 4, because
this is broken up by part of the greyhound racing
segment.

Also, although we believe the chances of heads/tails is
actually 50/50, it is commonly known that there is a
natural bias towards heads anyway.....c'mon, who honestly
WANTS to call tails at a coin toss??? You KNOW you're
gonna lose!!! So the chances of the guy calling tails
are relatively slim, especially as Derren rushes him
into a decision and uses some clever analogical
marking to suggest heads over tails.

Also, bear in
mind that if Derren (or the lad) was wrong about which
way up the coin was, it could not, as you suggested,
be edited out at the end....remember, there is no
fifth coin reveal, as Derren specifically tells him not
to open his hand, and explicitly states the
effect/result he is looking for before the guy opens
it.

Sorry to shatter your illusions on this one, but
whilst the first five guesses are down to skill, the
piece de resistance is a well-worked con....but it
leaves the audience and participants happy, which is the
main thing!!
