I used to have some music software that converted wave to MIDI. It was
Studio Vision Pro by Opcode. Only really worked for single notes though.
Obviously it would be no good for speech!

MIDI is Musical Instrument Digital Interface... You cannot convert speech
to MIDI.
Essex uni was doing research into wav->midi back in '95 - I would be
interested to hear if they ever cracked the code.
