I think that if you've done nothing wrong, you shouldn't apologise.
No NLP required, just an attitude of plain old 'please yourself,
dickhead' if they're going so sulk.
...Unless they owe you money.

Indifference is quite a good weapon, this person is probably going to
think they've got something over you.
